Meringue Snowmen

These little snowmen are so cute, I don’t think I will be able to eat mine! Got this from Martha Stewart, but made a few changes. Perfect for Christmas Eve parties, fill the bottoms with ice cream and even the pickiest  kids will eat them!

To make these, you will need:

  • 6 egg whites
  • pinch of salt
  • 3/4 cup granulated sugar
  • 3/4 cup confectioner’s sugar
  • red food coloring (or any color you wish)
  • marzipan
  • 1/4 teaspoon almond extract

 

How to make them:

Heat your oven to 200 degrees F. In an electric mixer mix together the egg whites, salt, and then slowly add 1/4 granulated sugar. Mix until stiff. Gently fold  this mixture into the leftover granulated sugar and confectioner’s sugar, also add the almond extract.  Move the meringue to a pastry bag with a 3/4-inch round tip. On a pan lined with a silicone mat or wax paper pipe a 3-inch mound for the body. Then pipe a half-circle around the top of the mound for the arms. Pipe a 1 to 1/2-inch mound on the top, and you’ve finished your first snowman! Keep doing this until you have 9 snowmen.

Mix the leftover meringue with the food coloring, keep adding until the color is where you want it. Put the colored meringue into a sandwich bag with one of the corners slightly cut. Use this to make a cute little nose (I think the red coloring looks best, but that’s just me)

Bake the little guys for 30 minutes, or until the outside is hard, but the inside is soft. Let them cool, then scoop out the inside with a spoon. You won’t need this anymore, so you can go ahead and throw it away. Return the snowmen to the oven and bake for 1 to 1/2 hours, or until firm. Watch them so they stay white! If they begin to color, take them out, and let cool.

To make the hats, melt chocolate(semi-sweet or milk) and using the same technique as the S’mores, dip them in and make sure they are completely covered. Don’t take off the extra chocolate, instead swirl it around on wax paper to make the brim. Let set until firm.

Take 4 ounces of marzipan (or half a roll) and mix with food coloring, any color. Mix until you reach the color you want. Roll out and cut into 9  strips. Cut a triangle out of the ends. place these around the necks for the scarfs.

Almost done!

Pour the remaining chocolate into a sandwich bag with the corner slightly cut and make eyes and buttons. Later on, fill with mousse or ice cream in the middle. I promise you and your guests will enjoy them! 🙂

Smores on a Stick!

If you are like most people, you’re probably wondering; how else do you make a S’more? I got this idea from gimmesomeoven.com . This S’more is completely on the stick, graham cracker and all! Watch out for the sharp point!                                                                               

You will need:

  • 1 bag of semi-sweet chocolate chips (or dark chocolate if you like)
  • 1 bag of large marshmallows
  • 1 package (not box!) of graham crackers, you can use crumbled candy canes for a more festive look
  • wood skewers (I used skewers because I couldn’t find popsicle sticks)

How to make them:

Melt the bag of chocolate chips, add shortening if it’s too thick for you. Put the grahMake sure the marshmallow dosen't fall of tha stick!am crackers in a plastic bag and crumble them till they are tiny bits with no giant chunks. Pour the graham crackers into a plate and place that next to the chocolate (this would be the time to crumble the candy canes if you are doing those). Skewer the marshmallows on the skewers and dip them into the chocolate, making sure to cover the top as well. Roll the marshmallows in the graham crackers covering the bottom as well. Do this until  you have finished the last marshmallow. Set these in the freezer or any where cold to let them set. Wait an hour or so, then enjoy!

Super Duper Brownies

These have GOT to be the best brownies ever!!! They are also very easy to make!

You will need:

1/2 cup of butter

2 oz of unsweetened chocolate

1 cup sugar

1/2 tsp vanilla extract

2 whole eggs

1/2 cup sifted flour

a pinch of salt

1/2 cup walnuts (optional)

What you do:

Preheat the oven to 350 degrees. Take a 8×8 brownie pan, flip it over, and cover it with tinfoil. Care fully lift the mold off the pan, and place it inside the pan. Place a pat of butter in the pan and put it in the oven for a few minutes. Once the butter is melted, spread it evenly around the inside of the pan.

In a bowl, melt the butter and chocolate in the microwave for 2 minutes. Mix together and heat an additional 2 minutes if needed. Add the sugar and the vanilla to the chocolate mixture and combine. Add the eggs to the chocolate mixture and combine(easier if you do one egg at a time.) Add the flour and the salt and combine. If you are using walnuts add those too. Pour the mixture into the pan and smooth. Bake 30-35 minutes. Ta-Da!
